The Bosco Ciancio restaurant doesn't have a fixed menu.
It changes every day: one starter, two pasta choices, two main courses, a dessert.
What arrives at the table depends on the season, on the local producers, on what Etna is offering right now.
In spring, wild asparagus from the forest. In autumn, mushrooms and chestnuts from the grove. In summer, the aromatic herbs that grow along the trails.
This isn't a restaurant that follows trends — it's a restaurant that follows the forest.

Bosco Ciancio sits at 1,200 metres on the southern slopes of Etna, in the heart of the National Park. Thirty hectares of private chestnut forest all around.
Ten rooms.
No televisions in the rooms. No air conditioning. In the evenings, the cool volcano air comes through the windows.
At night, the silence is absolute — no cicadas at this altitude. It's the kind of place you remember.
